摘要
乳脂肪是牛乳的主要营养成分,也是衡量牛奶品质优劣的重要指标之一。目前,牛乳营养品质低下已经成为中国奶业健康发展面临的严峻挑战。作者就乳脂肪的概况及影响乳脂率的因素作一简要综述。
Milk fat is the main nutritional components of milk,while it is an important indicator to measure the quality of milk.At present,the lower nutritional quality of milk has become the challenges that the healthy development of China's dairy industry faces.This paper makes a brief overview of the milk fat profile and the factors that influnce milk fat percentage.
