一水肌酸对肉鸭胴体组成及肉品质的影响 被引量:14

摘要 选用26日龄樱桃谷鸭360只,随机分为4个日粮处理组:Ⅰ组为对照组,全期饲喂基础日粮;Ⅱ组宰前5 d饲喂基础日粮+0.4%一水肌酸(creatine monohydrate,CMH);Ⅲ组试验期内10 d饲喂基础日粮+0.1%CMH;Ⅳ组试验期前5 d饲喂基础日粮+0.4%CMH,随后5 d饲喂基础日粮+0.1%CMH。每个组3个重复。试验结果表明:CMH对肉鸭的胴体组成无显著影响,添加CMH均显著降低了肉鸭血清中尿酸含量(P<0.05),Ⅱ、Ⅲ、Ⅳ组较对照组分别显著降低了20.21%、22.37%、16.93%;Ⅱ组血清肌酐含量提高21.34%(P<0.05);添加CMH提高了胸肌宰后pH45min、pH24h值,降低了其滴水损失。另外,与对照组相比,Ⅱ、Ⅲ、Ⅳ组胸肌中乳酸含量分别降低30.67%、26.67%和21.33%(P<0.05);补充CMH能提高肉鸭血清中肌酸含量,Ⅳ组提高31.71%(P<0.05),Ⅱ组及Ⅳ组胸肌中总肌酸水平分别提高8.31%(P<0.05)和5.07%(P<0.05)。结果提示,饲料中添加一水肌酸可以提高肉鸭血清及肌肉中的肌酸水平,降低宰后肌肉中的乳酸含量,延缓畜禽宰后pH值下降,提高肌肉系水力,改善肉品质。 Three hundred and sixty healthy 26 day-old cherry valley ducks were randomly divided into 4 treatments,each treatment included 3 replicates of 30 ducks.Experimental treatments were consist of:groupⅠ:the control diet;groupⅡ:the control diet with 0.4% creatine monohydrate(CMH)for 5 d before slaughter;groupⅢ:the control diet with 0.1% CMH for 10 d before slaughter;group Ⅳ:the control diet with 0.4% CMH for 5 d followed by a control diet with 0.1% CMH for the next 5 d before slaughter.The results showed that CMH supplementation had no effect on carcass composition.CMH treatments significantly decreased the contents of uric acid in serum by 20.21%(P0.05),22.37%(P0.05)and 16.93%(P0.05),respectively.CMH supplementation improved the breast muscle pH45min and pH24h value,and decreased the drop loss.In addition,after CMH supplementation,the lactic acid contents of breast muscle decreased by 30.67%(P0.05),26.67%(P0.05)and 21.33%(P0.05),respectively,the blood creatine levels was also improved with different CMH supplementation in which the group Ⅳ was significant improved by 31.71%(P0.05).The total creatine pool in breast muscle of groupⅡandⅣsignificantly increased by 8.31%(P0.05)and 5.07%(P0.05),respectively.Those results indicated that CMH supplementation increased the creatine levels in serum and muscle,reduced the lactic acid content in muscle after slaughter,delayed pH decline postmortem and had a rising trend of water-holding capability.Consequently CMH supplementation may improve meat quality.
