研究了大蒜中大蒜辣素的含量测定方法——定硫法，确定了最佳测定条件，此方法平均回收率为９６．７４％ （ＲＳＤ为０．８１％ ），并对白皮蒜和红皮蒜中的大蒜辣素含量进行了测定。

The allicin content in garlic is determined with the determining sulfur method and optimum determination conditions are given.The allicin content of white garlic and red garlic are determined.The results show that the allicin in white garlic is more than that in red garlic.
