摘要
对大余麻鸭、吉安红毛鸭、兴国灰鹅、广丰白银鹅、丰城灰鹅和莲花白鹅的肌肉脂肪酸含量进行了测定。在6 个鸭、鹅品种中,油酸含量最高,其次是棕榈酸、亚油酸和硬脂酸,但不同种类的脂肪酸含量在鸭与鹅之间存在一定差异。鹅的油酸含量高于鸭,而亚油酸则低于鸭。必需脂肪酸的含量在鸭和鹅之间存在较大差异( 鸭为17.31 % ~21 .64 % ,鹅为12 .36 % ~14 .62 % ) 。
The relative contents of muscular fatty acids in six native duck and goose breeds in Jiangxi Province were analysed. These breeds included Dayu Spotfeather Duck, Ji'an Redfeather Duck, Xingguo grey Goose, Guangfeng White Goose, Fengcheng grey goose and Lianhua White Goose. The results showed: The percentage of the oleic acid is the highest in both duck and goose, the second is palmitic acid, and fellowed by linoleic acid and stearic acid. But there are some differences in kinds of fatty acids between duck and goose. The content of essential fatty acids is higher in duck (17.31%~21.64%) than that in goose (12.36%~14.62%).
