济南市区蔬菜、水果、粮食和鲜肉中铜、锰、锌、硒含量调查 被引量:8

Investigation of Copper,Manganese,Zinc and Selenium Contents in Vegetables,Fruits,Grains and Fresh Meat in Jinan,Shandong

摘要 目的调查济南居民日常消费的蔬菜、水果、粮食和鲜肉中铜、锰、锌、硒的含量。方法于2008年采集济南居民日常消费的蔬菜、水果、粮食和鲜肉进行消化处理,采用火焰原子吸收分光光度法检测铜和锌,以石墨炉原子吸收分光光度法检测锰,以氢化物发生-原子吸收分光光度法检测硒。结果所调查的4种元素中锰和锌的含量比较高,硒最低;粮食和鲜肉中的锌和硒含量高于蔬菜和水果;粮食中的铜、锰、锌、硒含量相对较高。济南居民日常消费食品总体上铜含量低于《中国食物成分表2002》参考值,硒含量高于参考值。济南蔬菜中的锌偏低,鲜肉中的锰偏高,蔬菜、水果、粮食中的硒偏高。结论本次调查的济南常见食物铜含量较低,应引起关注。 Objective To know the levels of copper, manganese, zinc and selenium in vegetables, fruits, grains and rresh meat in Ji'nan. Methods Samples of vegetables, fruits, grains and fresh meat were collected for determination of four elements in Ji'nan in 2008.Copper and zinc were detected by flame atomic absorption spectrometry, manganese was detected by graphite furnace atomic absorption spectrometry, and selenium was detected by hydrogenation atomic absorption spectrometry. Results Manganese and zinc contents were higher, selenium content was the lowest among the four investigated elements,especially in vegetables and fruits. Zinc and selenium contents in grains and fresh meat were higher than those in vegetables and fruits. Copper, manganese, zinc and selenium contents in grains were higher compared with the other foods. Compared to the reference of China Food Composition 2002, copper content of Ji'nan foodstuff was lower, but selenium content was higher in general. Zinc content in vegetables was lower, but manganese content in fresh meat and selenium content in vegetables, fruits and grains were higher. Conclusion Copper content in food in Ji'nan, Shandong province is lower, which should be paid more attention for rational diet performance.
