摘要
综述了蕨菜护色、干燥及保鲜技术的研究进展,并对蕨菜采后贮藏保鲜技术的发展趋势进行了展望。
The paper reviews the color preserving, drying and fresh-keeping technology of Pteridium aquilinum （ L. ） vat. latiusculum, and forecasts the development prospects of its storage and preservation.
