摘要
目的了解成都市高新区建筑工地食堂卫生状况,为相关部门加强该行业监督管理提供科学依据。方法在成都市高新区随机抽取了30家建筑工地,并于2010-05/08对这些工地食堂的卫生设施、卫生管理情况及食品安全性进行了调查。结果建筑工地食堂办证率40.0%,从业人员持证率75.2%;50.0%的工地食堂加工场所布局合理,大米合格率90%,植物油合格率100%,餐具消毒合格率为8.6%。结论建筑工地食堂食品安全隐患多,要强化建筑工地食堂经营者的守法意识,要加强卫生宣传力度,提高食品从业人员卫生意识。相关执法部门间应加强监督,尽力消除工地食堂食品安全隐患。
Objective To understand the hygienic status of the canteens of construction sites at high-tech development zone in Chengdu,provide scientific evidence to the relevant departments to strengthen supervision and management.Methods A total of 30 construction sites in Chengdu hi-tech zone were randomly sampled and investigated the health facilities,health management and food safety of the canteens of these sites at May 8th,2010.Results There were 40.0% of these canteens had hygienic licenses,75.2% of the employees had health certificates,only 50.0% of the processing places of canteens had reasonable layout,the passing rate of rice was 90%,of vegetable oil was 100%,of tableware disinfection was 8.6%.Conclusion There were a lot of food safety problems at the canteens of construction sites,the sense of law among the canteen operators should been strengthened,and the health promotion also should been strengthened for practitioners to improve food hygiene awareness.The relevant law enforcements should strengthen supervision and try to eliminate food safety risks on site canteens.
