摘要
研究确定新鲜番茄皮渣在热风干燥箱中最适干燥条件:厚度1.0 cm,温度100℃,时间160 min;然后采用碱性提取法从番茄皮渣中提取水溶性膳食纤维,通过单因素试验和正交试验确定最佳提取工艺条件:料液比1︰17、pH值12、提取温度85℃、提取时间120 min,此时提取率最高,达36%;水溶性膳食纤维的膨胀性和持水力分别为5.9 mL/g,9.85 g/g。
The fresh tomato pomace was studyed by drying in hot air and determined the optimum conditions: the thickness of 1.0 cm,temperature 100 ℃,time 160 min;Through single factor experiments and orthogonal experiment,alkaline extraction method was used to extract the soluble dietary fiber from tomato pomace and the optimum extraction conditions was that: the ratio of liquid was 1:17;pH value of was 12 and extraction 120 min at 85 ℃.The extraction rate was up to 36% at this time.soluble dietary fiber swelling was 5.9 mL/g and water holding capacity was 9.85 g/g.
