摘要 在回顾竹笋采后品质变化规律及机理的基础上,综述防止微生物侵染、降低生理活性、防止水分流失等多项及配套保鲜技术的研究成果,并提出竹笋保鲜的发展方向。 Based on the review of quality deterioration and its mechanisms of bamboo shoots during storage,the research results on techniques of preventing micro-organic infection,reducing physical activity activities water loss and preventing moisture loss and many other and supporting fresh-keeping techniques were summarized,and the development direction of fresh-keeping of bamboo shoots were proposed in this paper.
