摘要
目的:了解广州市海珠区肉菜市场销售的浸泡水发食品、水产品中甲醛残留量情况,为食品卫生安全监管提供依据。方法:2007年-2010年随机抽取我区肉菜市场销售的13种水产品和10种水发食品,采用乙酰丙酮比色法对抽检样品进行甲醛含量检测。结果:112份抽检样品中,检出甲醛34份,总阳性率为30.4%,其中水产品阳性率为23.0%,水发食品阳性率为44.7%,两者比较差别有统计学意义(χ2=5.63,P<0.05)。水发食品中甲醛合格率2007年-2010年呈下降趋势,而水产品中甲醛合格率2008年较低。结论:海珠区市场销售的水产品、水发食品存在添加甲醛的不法行为,在虾仁、白饭鱼、牛百叶等产品中尤为严重,应加强水产品特别是水发食品的卫生监督、监测、管理,切实保护消费者身体健康。
Objective:To understand the formaldehyde in the soaked food and aquatic products,which were sold in food market in Haizhu district of Guangzhou,and to provide a basis for the food health safety.Methods: From 2007 to 2010,13 kinds of aquatic products and 10 kinds of soaked food from the food market of Haizhu district were selected in random to detect the formaldehyde level by acetylacetone-colorimetric method.Results: In the 112 samples,formaldehyde were detected in 34 samples with the total positive rate 30.4%,in which the positive rate of aquatic products and soaked food were 23.0% and 44.7% respectively.There is statistical significance between the difference of them(χ^2=5.63,P〈0.05).The acceptable formaldehyde level in soaked food kept decreasing from 2007 to 2010,with the lowest acceptability in 2008.Conclusion: Illegality of adding formaldehyde was found in the market-available aquatic products and soaked food in Haizhu district,especially serious in the shelled shrimp,whitebait and tripes.Therefore,it is very important to strengthen the supervision and management of the aquatic products,especially the soaked food,to protect the health of the consumers.
