乳酸菌抗氧化机理的初步探讨 被引量:15

摘要 乳酸菌抗氧化的本质是清除各种活性氧和自由基,抑制核酸、蛋白质和脂类氧化。乳酸菌的抗氧化体系由活性氧、自由基清除系统和氧化损伤修复系统2部分组成。针对活性氧的形成途径以及在分子和代谢水平上的危害作用,本文详细论述了乳酸菌的抗氧化机制,为进一步深入研究提供了思路。
