感官检测作为肉类品质的评价方法,在肉类产品中得到了广泛的应用。介绍了感官检测的定义、方法,并就感官检测在肉类产业中的应用加以阐述,为其在肉类产业中的应用提供技术支持。
Sensory testing of meat quality has been widely used in meat products.In this article,the definitions,methods of the sensory test were described,and its application in meat industry was elaborated in the hope of providing technical support in the meat industry.
