摘要 黑曲霉(Aspergillus niger)直接发酵法制备马铃薯微孔淀粉。在单因素研究的基础上,采用正交试验优化发酵工艺条件。试验结果表明,在摇床转速170r/min,初始pH值为5.5,4%豆饼粉,3%接种量,前期发酵40h,补加10%生淀粉,后期发酵45h的条件下,制得微孔淀粉吸附性能较佳,吸水率和吸油率分别比原淀粉提高了62.8%和69.2%。 Microporous potato starch was prepared directly by Aspergillus niger fermentation. The fermentation conditions were optimized by orthogonal test according to the results of single factor experiment. The optimal fermentation conditions were obtained as follows: rotation speed 170r/min, initial pH value 5.5, bean powder 4%, inoculum 3%, first fermentation time 40h, feeding raw starch 10% and second fermentation time 45h. Under these conditions, the adsorption property of microporous starch is good, and its water and oil absorption ratio increased by 62.8% and 69.2% compared with those of the original starch, respectively.
