摘要
利用分光光度计法对油炸食品中羰基价进行测定,并对其实验结果与酸价、过氧化值的实验结果进行分析比较。油炸食品中酸价、过氧化值、羰基价是检验中的重要指标,这些检验项目是否合格,直接反映出油炸食品品质的好坏,是反映油炸食品变质的重要指标。
Use spectrophotometer of fried foods carbonyl value to measure and the results of the experiment with the price, it is the value analysis of the experimental results.Fried foods, the acid value, peroxide value, carbonyl value is an important indicator of test.
