摘要
采用3个品种的桑椹,分别从5个方面考察了桑椹果汁不同抗氧化活性表现。结果发现,3个品种的桑椹果汁均具较好的清除羟基自由基、超氧阴离子自由基、DPPH自由基能力和抑制亚油酸氧化活性。其螯合铁离子活性较弱。其抗氧化活性均随浓度升高而增强,具有明显的剂量效应。3个品种中,抗氧化活性从大到小依次为小黑头>大—10>红果。
This article studies antioxidant activities of three varieties of mulberry juices by five antioxidant determination methods.Results showed that,three varieties of mulberry juices all have strong scavenging hydroxyl,superoxide anion and DPPH radical activities and inhibite linoleic acid oxidation activity.The chelating iron ion activities of mulberry juice are weak.All the antioxidant activities of mulberry juice are increase with the concentration.In three varieties of mulberry juice,the antioxidant activities sequence is XiaoheitouDa-10Hongguo.
