摘要
为了进一步探讨台蘑的营养价值,试验对五台山杯菌子实体中主要营养成分的含量进行了测定。结果表明:其粗蛋白质、多糖、粗脂肪含量分别为45.597%,8.772%,2.359%;含有18种氨基酸,总量为30.66%,8种必需氨基酸占氨基酸总量的37.12%;矿质元素Mg、V、Mn、Fe、Co、Cu、Zn、B、Al、Ca、Ge、Se、P的含量分别为1537、0.496、53.18、278.63、0.546、100.61、101.00、131.84、172.26、262.79、0.397、0.744、13 581 mg.kg-1。
To investigate the nutritional value of Wutaishan mushroom,the main nutrients of Wutaishan Clitocybe were determined.The results showed that the content of crude protein,polysaccharide and crude fat was 45.597%,8.772%,2.359%,respectively;The total content of 18 kinds of amino acids was 30.66% with 37.12% of eight essential amino acids.The mineral elements Mg,V,Mn,Fe,Co,Cu,Zn,B,Al,Ca,Ge,Se and P were present at concentrations of 1537,0.496,53.18,278.63,0.546,100.61,101.00,131.84,172.26,262.79,0.397,0.744,13 581 mg·kg-1,respectively.
