摘要
以鲜雷竹笋为试材,选用壳聚糖和氯化钙作为涂膜剂对其进行涂膜处理,测定了贮藏期间雷竹笋的失重率以及氨基酸、Vc、粗纤维的含量。结果表明,0.75%壳聚糖+4%氯化钙作为涂膜剂的保鲜效果最好,能有效降低雷竹笋的失重率和腐烂率,抑制其纤维素含量的增加,降低其呼吸速率。
The fresh PhyUostachys pracecox shoots were used as the material, choosing chitosan and calcium chloride as the film coating process in this study. The weight loss and the content of amino acids, Vc, crude fiber were determined about the fresh P. praeecox shoots in duration of storage. The results showed that 0.75% chitosan and 4% calcium chloride as film coating agent was best. The rate of weight loss and decay about the freshness P. pracecox shoots could reduced effectively in this treatment, and the content of cellulose was inhibited,respiratory rate was decreased,had a better effect on storing the fresh P. pracecox shoots.
