摘要
根据猪肉变质过程的生化机理,制作了猪肉腐败过程中各个时段的切片样本,通过实验研究了猪肉新鲜度与其完整细胞数量之间的内在关系。提出了将RGB图像转换为灰度图像以后,经直方图均衡增强处理,应用Canny算子检测细胞边缘,提取单位面积完整细胞数量作为猪肉腐败程度的检测方法,并将该结果与TVB-N值进行参照,检测结果一致。本研究为猪肉新鲜度测定提出了一种全新的简便辨识方法。
According to the biochemical mechanism of pork metamorphism,the biopsy samples in each time during the pork-corruption process were produced.The inherent relationship between pork freshness and the number of intact cells was studied by a large number of experiments.The RGB image converted into gray image and enhancement processing by histogram equalization were proposed,Canny edge operator was applied to detect cell to calculate the number of intact cells per unit area as the level of pork corruption,and the test results by this method with the TVB-N values were compared,test results of the two methods were consistent,the results of this study was a new simple method for determination of the freshness of pork presents.
