摘要
对酱香型白酒生产过程中的各影响因素进行分析。结果表明,优质、高产酱香型白酒酿造过程的影响因素概括起来主要为三大类:定向因素、营养因素和管理因素。只有对这些影响因素进行全面了解与掌握,才能生产出优质的酱香型白酒。
The main influencing factors in the production process of Maotai-flavor liquor were investigated. The results suggested that all the influ encing factors could be classified into three types including orientation factors, nutrition factors and management factors. Only if we had compre hensive and deep understanding of these influencing factors, quality Maotai-flavor liquor could be produced. (Tran. by YUE Yang)
