摘要
评价白酒质量的优劣,最直观的两个指标是杂醇油和高级脂肪酸乙酯。适量杂醇油和高级脂肪酸乙酯是构成白酒香味成分不可缺少的呈味物质,也因其贮存过程中相对稳定性及在分析过程中分离度高、定量准确等特点,可以作为评价白酒酒质优劣的两项重要指标。
From the angel of test analysis, two indexes including fusel oil content and higher fatty acid ethane ester content could directly reflect liquor quality grade. Appropriate fusel oil content and higher fatty acid ethane ester content is indispensable to the formation of liquor flavor. On the other hand, they have high stability during liquor storage and have the features including high separation and accurate quantification in ana- lytic process. Accordingly, the two indexes could be used to evaluate liquor quality.
