云南产紫果西番莲果实挥发物的热脱附-气相色谱/质谱联用分析 被引量:8

摘要 采用热脱附-气相色谱/质谱(TCT-GC/MS)联用技术,对动态顶空密闭循环吸附捕集云南产紫果西番莲果皮、果肉和籽的挥发物分别进行检测。结果表明,成熟果实挥发物中可检出烷烃、烯烃、酯类及醛、酮类化合物,其中果皮挥发物以烷烃、烯烃为主,酯类化合物种类少、含量低;果肉挥发物以烯烃、酯类为主;籽挥发物中烷烃、烯烃、酯类均可明显检出,但酯类含量最高。果肉挥发物中的丁酸酯和己酸酯可能是西番莲果实的主要特征挥发物类型,相对含量超过5%的酯类化合物有丁酸乙酯(5.52%)、己酸乙酯(8.66%)、丁酸己酯(10.88%)和己酸己酯(6.71%)。紫果西番莲籽挥发物保留了果实中的主要酯类特征香气组分。 Fragrances from peel,flesh and seed of Passiflora edulis Sims.fruit originated from Yunnan were closely and circularly head-space sampled within adsorptive tubes,then analyzed by thermal-desorption cryo-trapping gas chromatography/mass spectrometry(TCT-GC/MS).Results showed that alkanes,alkenes,esters,aldehydes and ketones were contained in the three samples.Among volatiles from the peel,alkanes and alkenes were predominant and esters were rare and in low contents.Alkenes and esters were main volatile chemicals from the flesh.And it was considerably found that alkanes,alkenes and esters were detected from the seed volatiles,among which esters were in the highest contents.It was estimated that some butyrates and hexanoates from the flesh volatiles were the main characteristic chemicals of Passiflora edulis Sims.fruit,among which ethyl butyrate(5.52%),ethyl hexanoate(8.66%),hexyl butyrate(10.88%) and hexyl hexanoate(6.71%) were higer than 5% in relative content.And the main characteristic fragrant chemicals of Passiflora edulis Sims.fruit were kept in the seed volatiles.
