摘要
试验以金针菇下脚料为原料,采用碱结合酶法,通过正交试验优化水不溶性膳食纤维的提取和脱色工艺。结果表明,在最佳工艺条件下,金针菇水不溶性膳食纤维的提取率达到64.88%,产品呈淡黄色,无粗糙感,其持水力为7.21g/g,膨胀力为5.8mL/g。
In this paper the extraction process of the insoluble dietary fiber from the waste of Flammulina velutipes by alkali with the law of the enzyme was studied.The technology of extraction and decoloration was studied by orthogonal test.It was showed that under the optimal condition the extraction rate of insoluble dietary fiber was 64.88%.And the insoluble dietary fiber was in yellow,no rough feel,holding water capacity was 7.21 g/g and swelling property was 5.8 mL/g.
