摘要
为了更加有效地对衰退的发酵剂菌株进行复壮,本研究评价了一种结合连续传代、好氧与厌氧交替培养及分离纯化相结合的方法。用此方法对性能衰退的保加利亚乳杆菌(乳1#杆)及嗜热链球菌(乳1#球)进行复壮,得到了良好的效果。与原始菌株相比,复壮菌株的生长性能、产酸性能及产香能力都有了显著的提高。与传统复壮方法相比,此种方法工作量小、复壮效果好,适合用于现代乳品工业中发酵剂性能的保持。
Aiming to rejuvenate starter lactic acid bacteria more effectively, this study managed to develop a new method, in which succession activation, alternative cultivation in aerobic or anaerobic conditions, and strain isolation were combined. After rejuventated in the above way, the growth rates, acidifying rates and aroma-producing abilities were improved in both Laetobacillus delbrueckii subsp. bulgarieus(Ru 1#)and Streptococcus thermophilus(Ru 1#)compared to their original strains. The new method was less laborious and more effective than the traditional one. So it Was more. suitable for the properties maintenance of milk starters in modern dairy industry.
