农产品中类似神经鞘脂类真菌毒素的污染与控制 被引量:1

CONTAMINATION OF SPHINGANINE ANALOGUE MYCOTOXINS IN AGRICULTURE PRODUCTS AND ITS CONTROL

摘要 类似神经鞘脂类真菌毒素(SAMT)腐马素和AAL-Toxin因其结构与二氢神经鞘氨醇类似,它们竞争性抑制二氢神经鞘氨醇N-酰基转移酶的活性,打破生物体内神经鞘脂类物质的平衡,从而对人畜健康产生威胁。本文介绍了SAMT的结构、生物合成和毒理机制,综述了SAMT及其产毒菌株的各种检测方法及在农产品中的污染状况和相应的防控手段,为农产品的安全生产和SAMT的进一步研究提供参考。 Due to the structural similarity with sphinganine,sphinganine analogue mycotoxins(SAMT) fumonisin and AAL-Toxin execute their toxicity through the competitive inhibition of sphinganine N-acyltransferase.In this paper,the structure,biosynthesis,and toxicology of SAMT as well as the detection methods of SAMT and SAMT-producing strains,and the contamination of SAMT in agriculture products in different areas were reviewed.The ways to control the contamination of SAMT in agriculture products were also suggested.
