摘要
越橘提取物是一类以花色苷为指标物质的混合物,因表现出艳丽的色泽和较强的抗氧化与清除自由基能力,在食品工业和医药工业上均有广泛应用。为了给相关的研究者提供一份简洁而实用的参考,本文从越橘提取物中花色苷的结构和性质、检测方法、制备及应用等几个方面给予了必要的介绍和分析,并对目前国内越橘提取物产业化过程遇到的问题提出了相应的解决之道。
Bilberry Extract is a mixture of anthocyanosides composed of polysacchrides,pectin,tannin,ursolic acid and a little VC and VB.Because of its bright color and strong ability of antioxidation and free radical scavenging,Bilberry Extract has been used widely on food and medicine industry.The related research,the structure and property,the determination and the method of preparation of Bilberry Extract are illustrated in this paper.At the meantime,the problems and solutions during the processing of industry are proposed.
