云南地区传统乳饼中乳酸菌的分离及鉴定

摘要 乳酸菌是革兰染色呈阳性的杆菌或球菌,不形成内生孢子,不运动,过氧化氢酶试验结果阴性、对葡萄糖发酵能产生50%以上乳酸,而且在缺氧的环境中生长良好的兼性厌氧性细菌的总称。它能增强人体免疫功能,提高食品营养价值,改善食品风味,
