摘要
论述了国家地理保护标志产品——资中冬尖的产业化生产工艺和技术。文章重点阐述了资中冬尖的种植、采收模式,划菜、晾晒、修剪等工艺操作;论述了资中冬尖腌渍发酵各个环节的技术操作工艺参数;提出了冬尖生产中的一些亟待解决的问题并提出了改进措施。
The national geographic protection symbol product——Zizhong Dongjian's industrialized production process and technology were discussed in the paper.The important points including the Zizhong Dongjian's planting,collecting mode,delimit dishes,drying in the sun,pruning process operation etc were described;the Zizhong Dongjian pickled fermentation each link technical operation process parameters also were discussed;some problems in the production of Zizhong Dongjian and some improving measures were put forward and pointed out in the article.
