摘要
本文从饮食思想,饮食礼仪、饮食风俗,保留经典、继承精湛技艺,创新精神、开放意识等四个方面探讨了继承中国古代饮食烹饪文化遗产的问题,指出餐饮工作者应认真挖掘和继承中国饮食烹饪文化遗产。
This paper breaks down how to ensure the continuation of the Chinese culinary culture heritage from the following perspectives ： cuisine ideology, table manners, culinary customs, essence preservation, skill contin- uation, innovation and open-mindedness.
