论月饼的美食属性及产业可持续发展

On Culinary Properties of Mooncakes and their Sustainable Industrial Development

摘要 月饼从最初的日常性食品逐渐演变为中秋节的节日食品与礼品,因而具有了美食与文化双重属性。如今,月饼品类繁多、产业发达,但也存在时间性太强、过度包装、可食性下降等问题。本文重点阐述了丰富月饼美食属性的必要性、可行性、方法及要点,指出应通过拓宽思路、不断创新来丰富月饼的美食属性,延长月饼生产、销售和食用时间,才能更好地传承中国饮食文化,促进月饼产业的持续发展。 The moon cake has acquired both a culinary and a cultural significance during the course of its evolution from an ordinary food to a necessary holiday food and gift. Nowadays, the moon cake industry is growing vigorously with its vast variety, but such problems as its seasonal feature, over-packaging and the decrease of its eatability are also hindering its further development.
