果蔬谷物皮渣湿法切割粉碎关键参数与相关流场的研究 被引量:1

摘要 为提高生产果蔬谷物饮品中原料的利用率,分析了果蔬谷物皮渣湿法高速切割超细粉碎机理与关键设备技术。为了直观描述与分析果蔬谷物皮渣在切割粉碎腔内的转子刀头形式、定子刀片偏转角度、转子刀头转速以及定子刀片个数对流场的影响情况,运用Fluent软件对果蔬谷物皮渣在切割粉碎腔内流场进行可视化分析与研究,得到相关结构参数与粉碎流场的分布状态,为高纤维果蔬谷物饮品开发与清洁化生产提供一定的技术支持。 In this paper,in order to improve the utilization rate of raw materials of the production of fruit-vegetable and grain drinks,the mechanism of the wet high-speed superfine cutting grinding and the key equipment technology of fruit-vegetable and grain dregs are analyzed.In order to describe and analyze the impeller blade structure,deflection angle of stator blade, the impeller rotating speed and the number of stator blade on the effect of cutting grinding flow field in the cutting grinding cavity of fruit-vegetable and grain dregs,the cutting grinding flow field is visually analyzed and researched by using the software of Fluent,the related structure parameters and the distribution of the grinding flow field are gained too.The results of the research will provide certain technical support for the development and cleaner production of the high fiber fruit-vegetable and grain drinks.
