摘要
综述了我国当前带壳花生烘烤加工工艺发展进程及其特点,分析了加工技术、加工品种和抗氧化保存技术现状及存在的问题,展望了带壳花生烘烤加工的发展趋势。
This paper presents and analyses systematically the presence of the roasted peanut machining techniques,variety screening and antioxidation technique,points out the remained problems and foresees the further development of these techniques.
