The Relationship Between Decomposition of Rutin and Heated Temperature

摘要 目的:分析芦丁分解速度与加热温度的相关性。方法:在120~250℃每间隔10℃对芦丁单体分别加热30 min,得到14份受热样品,采用高效液相色谱法测定这些受热样品中的芦丁、槲皮素的含量。结果:在120~150℃加热,芦丁含量无显著性变化;160℃~200℃加热,芦丁开始分解,槲皮素含量升高,且随着温度升高,分解速度增快,槲皮素含量也越高。210~250℃加热,芦丁、槲皮素含量均降低。结论:芦丁在160℃以前几无分解,而在160~200℃部分分解产生槲皮素,而在210℃后加热,芦丁被破坏。 Objective:To analyze the relationship between the decomposition rate of rutin and the heating tempreature.Method:Rutin monomers were heated from 120 ℃ to 250 ℃ for 30 min,according to internal temperature was 10 ℃,separately.The content of rutin,quercetin in the heated samples were determined by HPLC.Result:The content of rutin and quercetin were not change singnicantly from 120 ℃ to 170 ℃.The content of rutin was reduced significantly from 180 ℃ to 200 ℃ and the content of quercetin was increased significantly.The contents of the two compounds were all reduced.Conclusion:When the heated temperature between 180 ℃ to 200 ℃,rutin partially decomposed into quercetin.Over 210 ℃,rutin wasall damaged.
