摘要
"满汉全席"被今人称为"中国宴魁"、"烹饪之最"。从厨政层面看,此席大致是"满"在东北,"汉"在鲁、苏、川、粤,"全"在九州,"席"在清代食俎中。然则,它又与清王朝的政统密迩相关,是清王朝的统治者为治国安邦而施行"满汉一体"之策的产物。从前清到清初、清中及清末,此席式于其间的随势演绎的轨径一直贯穿清王朝的始终,并掺杂着这个王朝从勃兴到窳败的斑迹。
Man Han Quan Xi has long been considered the chief feast or the peak in cuisine. Literally, Man refers to north - east of China ; Han refers to Lu, Su, Chuan and Yue ; Quan refers to nine states ( a poetic name for China) ; Xi refers to sacrificial vessels in Qing Dynasty. However, it is also relevant to the policy , unity of Man and Han", which was adopted by the rulers in Qing Dynasty. Man Han Quan Xi has gone through Qing Dynasty, from early Qing' to mid Qing, to late Qing and has witnessed the dynasty from prosperity to fall.
