鱿鱼丝贮藏过程中甲醛含量变化动力学研究 被引量:4

摘要 对秘鲁鱿鱼丝在25、35、45℃条件下,不同贮藏时间氧化三甲胺(TMAO)、二甲胺(DMA)和甲醛(FA)含量进行监控,根据Arrhenius方程建立了各个指标变化的动力学回归方程。结果表明,TMAO、DMA和FA的变化均遵循1级反应模型,其动力学回归方程分别为:KB=1.0×104e-22778.6/RT,KB=8.3×105e-31555.0/RT,KB=610.3e-9504.6/RT,相关性均大于0.98。 Set up kinetics model of dried-seasoned Dosidicus gigas by determination the trimethylamine-N-oxide(TMAO),dimethylamine(DMA),formaldehyde(FA),at 25 ℃,35 ℃,45 ℃ at different time according to Arrhenius equation.The results showed that the change of TMAO,DMA,FA all fit 1 order model.the equations were KB=1.0×104e-22778.6/RT,KB=8.3×105e-31555.0/RT,KB=610.3e-9504.6/RT,the R2 were all big than 0.98.
