摘要
针对有些建立HACCP体系多年的水果罐头生产企业仍然出现微生物污染腐败这一问题,本文从微生物技术和空罐检漏技术的角度,结合多年生产实践,深入分析冷却水污染、不合理的搬运、原料污染及不均衡生产等问题的深层原因,提出了有效的措施来解决这些问题,并总结出HACCP必须建立在前提方案的基础上才能有效运行,在HACCP计划实施过程中,要对前提方案的有效性予以验证。
Some fruit canneries of establishing HACCP systems for many years still remained corruption of microgasms.From Application of microbial technology and air-tank leak detection technology,reasons were discovered in production process in this article which were the cooling water pollution,unreasonable carrying,raw materials pollution and uneven production corruption.Besides,it raises an appropriate and effective control measure and summarizes that HACCP must be based on current prerequisite program to run effectively on the basis of the implementation of HACCP plans and validation on the validity of the underlying plan.
