摘要
研究浸提法提取橘皮黄色素的最佳工艺条件。结果表明,浸提法的最佳提取工艺条件:95%乙醇为提取剂,料液比为1∶8(g/mL),在60℃下提取6 h。橘皮黄色素在酸性和弱碱性条件下较稳定,常用食品添加剂、氧化剂、还原剂对其稳定性影响不明显,有较强的耐氧化还原能力。
The optimum conditions for the extraction of yellow pigment from orange peel with immersing were studied and the stability was investigated.The result showed that the optimum conditions of immersing technique were: he ratio of 95 % ethanol to orange peel weight 1∶8,orange peel was immersed at 60 ℃ for 6 h.It has certain endurance to oxidizing t and reducing reactions.It is stable in acidity and slightly basic conditions.
