油茶营养成分的分析测定 被引量:19

摘要 试验以湖北黄袍山保健品有限公司提供的油茶籽及茶油为试材测定其营养成分(脂肪酸、可溶性蛋白质、可溶性糖、淀粉、粗脂肪、粗纤维等)的含量.结果表明:每100g油茶籽中粗纤维含量为4.08g,可溶性糖含量为0.42g,淀粉含量为6.94g,可溶性蛋白质含量为0.31g,粗脂肪含量为36.02g,其主要脂肪酸含量分别为棕榈酸8.38%,硬脂酸1.74%,油酸80.96%,亚油酸7.65%;每100g茶油粗纤维含量为0,淀粉含量为0,可溶性糖含量为0,可溶性蛋白质为0,其主要脂肪酸含量分别为棕榈酸8.06%,硬脂酸1.62%,油酸79.23%,亚油酸7.31%.可见产品加工过程会造成某些营养成分的流失,茶油里的营养成分并不齐全,但茶油的不饱和脂肪酸的含量达到86.54%,仍是一种优质食用油. The Camellia oleifera Abel seed and tea oil from Hubei Huang Pao Shan Health Food Co. , LTD were used as the testing materials and their nutritive ingredients (fatty acid, soluble protein, soluble sugar, starch, crude fat, crude fiber and so on) were identified. The result showed that the content of solu- ble sugar in the Coleifera seed in every 100 g was 0.42 g,the content of crude fiber was 4.08 g,the content of starch was 6.94 g,the content of soluble protein was 0.31 g,the content of crude fat was 36.02 g. And the main fat acid content in the C oleifera seed contained the palmitic acid 8. 45%, stearic acid 1.92% ,oleic acid 81.62% ,and linoleic acid 8.01~. The content of crude fiber in the tea oil in every 100 g was 0,and so was the content of soluble sugar, the content of starch, and the content of soluble protein. And the main fat acid content in the tea oil contained the palmitic acid 8.43 %,stearic acid 1.87 % ,oleic acid 81.66% ,and linoleic acid 8.04%. Although a loss of certain nutrient content was found in the product processing and the nutrient contents in the tea oil were incomplete, yet the relative amounts of unsaturated fatty acids to their total amount of the fats amounted to 89.70%. As a result,the tea oil is a good edible oil.
