食品中过氧化氢残留快速检测试纸的研制 被引量:17

摘要 过氧化氢作为廉价有效的防腐剂、漂白剂普遍被一些食品生产企业超量或非法使用,食品中过氧化氢残留超标会对消费者健康造成巨大威胁。传统的过氧化氢检测方法复杂且耗时较长,为满足现场快速、准确检测过氧化氢残留的需求,本研究利用酶促反应原理,将含有1 g/L的四甲基联苯胺(TMB)和10μg/mL的辣根过氧化物酶(HRP)混合溶液作为显色剂,并加入适当的保护剂,以定量滤纸为载体,经真空干燥后制成过氧化氢快速检测试纸。该试纸能够在8 s内对食品中的过氧化氢残留进行半定量检测,最低检出限达到0.5 mg/L,并且操作简单,价格低廉,可以应用于食品流通领域的各个环节。 Hydrogen peroxide(H2O2),an effective and inexpensive preservative and decolorant,is widely used in food process corporations.The traditional detecting method for hydrogen peroxide is complex and time-consuming.In order to find out a quick and easy detecting method,a test paper for hydrogen peroxide semiquantitative detection was prepared by adding mixture of 1 g/L TMB,10 μg/mL HRP and appropriate protectant on filter paper followed by vacuum dehydration.The detection limit was 0.5 mg/L and can be completed in 8 second.This simple and inexpensive detection method can be widely applied in food intermediate links.
