摘要
对微波辅助处理水浴回流提取啤酒花多酚的工艺条件进行了研究,在单因素试验的基础上,采用正交设计进行参数优化筛选.结果表明:正交试验确定的影响酒花多酚提取率的主次因素顺序为料液比>微波时间>乙醇体积分数>水浴温度>微波功率>水浴时间;最佳提取条件为微波功率为213W,微波时间为3.5min,乙醇体积分数为63%,料液比为1∶15,水浴温度为92℃,水浴回流时间为25min,酒花多酚的提取率为5.730%.
The study employed orthogonal design test which was based on single factor test,the conditions of microwave-assisted extraction on polyphenol from hops were studied.The results showed that the factors influencing polyphenol extraction ratio were taken the order of solid-liquid ratiomicrowave timeethanol concentrationbath temperaturemicrowave powerbath time.The maximum extraction rate of hops polyphenol was 5.730% when the extraction conditions were ethanol concentration 63%,microwave time 3.5 minute,solid-liquid ratio 1∶15,microwave power 213 W,bath time 25 minute and bath temperature 92 ℃ respectively.
