摘要
茶多酚(Tea Polyphenols)是茶叶中多酚类物质的总称,包括黄烷醇类、花色苷类、黄酮类、黄酮醇类和酚酸类等.它的酚羟基容易被氧化而产生质子H+,从而具有抗氧化和消除自由基的作用.本文对茶多酚的提取、分离工艺进行了研究.
The tea polyphenol (Tea Polyphenols) is in the tea the polyphenols material general name, inclu-ding flavanol class, variety glucoside class, flavanone class, flavanone alcohol type and phenolic acid class and so on. Because its phenol hydroxyl is easy to oxidize and provide proton H +, but it has the oxidation resistance and eliminates the free radical function. The tea polyphenol' s extraction, the separation craft' s research experiment is the nature experiment.
