摘要
随着微波加热的广泛应用,微波食品在日常生活中占有的比重越来越大,人们对微波食品安全性的关注程度也不断提高。该文对微波加热作用于食品的影响进行了综述,着重于微波加热与常规加热的差异,同时分析总结微波食品动物试验的相关记录。得出结论:微波加热对食品营养成分的影响各不相同,但从目前研究而言,微波食品是安全的。
With the extensive application of microwave heating,microwave food plays a increasingly important role in our daily life.People's attention on the safety degree of microwave food is also rising.This paper discussesd whether microwave had bad influence on food,with emphasis on the difference between microwave heating and conventional heating.We also summarised the animal experiments on microwave food.The author arrives at the conclusion: microwave is safe in the food processing on the whole.Even though the influences on nutrients are different.
