摘要
以薏苡仁和山药为主要原料,添加适量柠檬酸和蜂蜜,研制出口感优良、风味独特、质量稳定、营养丰富,并具有美容保健效果的薏苡山药保健饮料。采用正交试验和感观评定,确定了薏苡山药保健饮料的最佳配方及生产工艺参数。最佳配方为:薏苡仁乳25%、山药汁15%、柠檬酸0.15%、蜂蜜10%。
A compounded health beverage featured by nice taste, special flavor, stable quality, rich nutrients and beautification effect was prepared using Coix seed and Chinese yam as the main raw materials, with the addition of appropriate dosages of citric acid and honey. Through orthogonal experiments and sensory evaluation, the optimum formula and processing technology were determined. The formula was as follows: Coix seed milk 25%, yam juice 15%,citric acid 0.15% and honey 10%.
