静电技术加速酒类老熟机理的初步探讨

摘要 分析了老熟作用对酒类品质的影响,初步探讨了运用静电技术加速酒类陈酿(简称静电催陈)的微观机制。指出静电场具有催化效应,静电催陈可以大大缩短酒类自然老熟的周期。 The influnce of wine ageing on quality is analysed, and mechanism of acceleration of wine ageing by electrostatic technology ( It is called ageing by electrostatics for short) is tentatively probed and points out that electrostatic field possesses catalytic effect. Ageing by electrostatics can greatly shorten the cycle in which wine is aged in ordinary conditions.
