南极磷虾酶解工艺的研究 被引量:6

摘要 以水解度为指标,探讨中性蛋白酶水解南极磷虾的效果,通过试验筛选木瓜蛋白酶和枯草杆菌中性蛋白酶酶解南极磷虾的工艺条件。结果表明:南极磷虾自溶水解度为28.63%,添加中性蛋白酶可显著提高南极磷虾水解度;木瓜蛋白酶酶解工艺为酶解温度50℃、pH值7.5、酶解时间5 h、酶添加量0.3%,水解度达(42.17±0.17)%;枯草杆菌中性蛋白酶酶解工艺为酶解温度50℃、pH值7.5、酶解时间5 h、加酶量0.4%,水解度达(41.86±0.23)%。 By measuring the degree of hydrolysis (DH) as indicator, the hydro]yzation effect of Euphausia superba by neutral proteinase was discussed and the technological conditions for hydrolyzation of Euphcausia superba by papain and Bacillus subtilis neutral prnteinase were screened. The results showed that autolysis DH of Euphausia superba was 28.63% and DH of Euphausia superba could be improved observably by adding neutral proteinase. When the hydrolysis technologies of papain were enzymolysis temperature of 50℃, pH 7.5, enzymolysis time of 5 h, and enzyme adding amount of 0.3%, the DH reached (42.17±0.17)%: when the hydrolysis technologies of Bacillus subtilis neutral proteinase were enzymolytie temperature of 50℃, pH 7.5, enzymolytic time of 5 h, and enzyme adding amount of 0.4%, the DH reaehed (41.86±0.23)%.
