摘要
蛋白酶在水产品的加工中应用广泛。对蛋白酶在低值水产品以及水产副产品综合加工中的应用进行初步探讨,以期更好地开发利用蛋白酶资源。
Nowadays protease has been widely applied in the processing of aquatic product.The application of protease in the comprehensive processing of low-value aquatic product and aquatic by-product was preliminarily discussed,so as to develop and utilize the protease resources.
