江苏省常熟市2008—2010年肉制品中亚硝酸盐残留量研究 被引量:1

摘要 [目的]了解江苏省常熟市2008—2010年市售肉制品中亚硝酸盐的残留量。[方法]2008—2010年从常熟市大型超市和农贸市场市售咸肉类和灌肠肉类中采集167份样品,检测肉制品中亚硝酸盐的残留量。[结果]2008—2010年,江苏省常熟市市售肉制品合格率逐年提高,2010年较2008年提高12.24%。2008—2010年灌肠类肉制品的合格率较咸肉类肉制品高4.74%,大型超市肉制品的合格率较农贸市场高11.02%。[结论]常熟市市售肉制品中亚硝酸盐残留量仍然过高,尤其是农贸市场高于大型超市。食品卫生监督管理部门应加强市场监管力度。 [Objective] The research aimed to understand the residual quantity of nitrite in the meat products on sale in Changshu City of Jiangsu Province from 2008 to 2010.[Method] 167 samples of salted meat and sausage meat products sold in the large supermarkets and traditional farm products markets in Changshu City were collected from 2008 to 2010 to detect the residual quantity of nitrite in the meat products.[Result] The qualified rate of meat products on sale in Changshu City gradually increased from 2008 to 2010 and the qualified rate of meat products in 2010 was 12.24% higher than that in 2008.The qualified rate of sausage meat products on sale in Changshu City during 2008-2010 was 4.74% higher than that of salted meat products.And the qualified rate of meat products sold in large supermarkets was 11.02% higher than that of meat products sold in traditional farm products markets.[Conclusion] The content of nitrite in meat products on sale in Changshu City was still high and the content of nitrite in meat products sold in traditional farm products markets was high than that in meat products sold in large supermarkets.Therefore,the management department of food hygiene supervision should reinforce the market management.
