摘要 辣椒具有很高的营养价值及多种保健功效。干燥加工是辣椒产业精深加工主要方式之一。主要介绍了辣椒干燥技术研究现状、存在的问题以及辣椒干燥产业的发展趋势,旨在为辣椒加工产业的发展提供参考和帮助。 Chillies are rich in vitamin C and are a good source of capsaicin,capsanth in and fiber.The nutritional value of chillies contributes to many health benefits for many diseases.Chilli drying process is one kind of technique used to enlarge its lifetime for consumption,reducing packing and transportation costs.This paper mainly introduces the category and of chilli drying techniques.The development course is included and the existing problems and development trends are also raised so as to present some insights for development of chilli drying industries.
