河套蜜瓜果实发育过程中主要营养成分的变化 被引量:6

CHANGES IN CONTENTS OF SOME MAIN NUTRITIONAL COMPONENTS DURING FRUIT DEVELOPMENT OF MUSKMELON

摘要 以河套蜜瓜果实为试材,分析测定了果实生长动态以及果实发育过程中糖、酸、可溶性蛋白、叶绿素、类胡萝卜素和花色苷含量的变化规律。结果表明,河套蜜瓜果实生长呈单"S"型曲线;主要营养成分含量随果实发育呈不同的变化动态,其中可溶性糖在果实发育早期含量较低,随着果实发育含量迅速增加,至果实成熟时达到最大值56.95mg.g-1DW;可溶性蛋白和果酸在果实发育早期含量较高,随着果实发育含量迅速下降,至果实成熟可溶性蛋白含量略有升高,果酸含量则一直维持极低水平;叶绿素在果实发育早期含量较高,之后迅速下降至极低水平,直至果实成熟;花色苷含量则在果实整个发育期间呈高-低-高的变化动态。 The changes of growth phase and the changes of contents of sugar,acidity,soluble protein,chlorophyll,carotenoids,anthocyanins in developing(Cucumis melo L.cv.Hetao) were measured and analyzed.The results indicated that the growth curves of Hetao showed single sigmoid pattern;Main nutrient composition content is different with fruit development dynamics,The contents of soluble sugar were lower during the young fruit development,then rapidly increased and reached the peak of 56.95 mg·g-1DW in the mature period;The contents of soluble protein and acidity were higher during the young fruit development,then rapidly decreased,but the contents of soluble protein slowly rose again in the mature period;The contents of chlorophyll decreased straight on during fruit development;the contents of anthocyanins showed "higher-lower-higher " during fruit development.
