食用糯性裸大麦研究进展 被引量:5

摘要 裸大麦中,胚乳直链淀粉含量在0%~10%的,就是糯性裸大麦(waxy hulless barley)。糯性裸大麦作为营养和保健品的潜在供应源以及改变口感的配料产品,具有无与伦比的优势。本文从糯性裸大麦营养与食品加工优势、研究现状与展望等几方面对食用糯性裸大麦研究前景展开了探讨。
