摘要
目的建立"政府+企业+消费者+认证机构"的四方科学监管模式,完善和提高首都机场口岸餐饮业的食品安全管理体系。方法通过分析现有食品卫生监管模式以及餐饮企业HACCP体系运行现状,以ISO22000:2005食品安全管理体系为基础,提出"政府+企业+消费者+认证机构"的四方科学监管模式,并选取示范餐饮企业,以重大活动期间口岸食品安全保障工作为契机科学监管模式的有效性进行评估。结果四方科学监管模式显著提高了两个示范企业的最终餐食成品的卫生质量,能够有效保障"好运北京"测试赛、奥运会(残奥会)场馆供餐的卫生安全。结论四方科学监管模式可进一步推广应用到整个口岸餐饮业食品安全管理中,并可应用在其他口岸重大国际活动餐饮业卫生保障工作中。
Objective To establish the four-side scientific supervision mode designed to improve and enhance the airport's restaurants port of food safety management system. Methods Through analyzing the exiting food hygiene supervision mode and the function actuality of HACCP system in catering sector, choose two demonstration companies to establish the four-side scientific supervision mode in the base of ISO 22000 Food Safety & Management System , it focus on the important international events, and evaluates the application effect of scientific supervision mode. Results The scientific supervision mode improved the food hygiene level of two demonstration companies, and ensured the food safety during 'Good Luck Beijing' test match and Olympic Games. Conclusion The scientific supervision mode should be generalized to the food safety management of the whole restaurants port, and should be generalized to ensure the food safety during the important international events in other port.
